Wrapped Chicken Stuffed with Cheese


10 slices bacon
6 ounces cream cheese, softened
2 slices Swiss Cheese torn in pieces
4 green onions, chopped
2 Tbsp. chopped red bell pepper
1-2 tsp. Adobo (found in Spanish section)
1/2 tsp. ground pepper
4 skinless, boneless chicken breast halves


1.)  Preheat oven to 350 degrees F.  Lightly grease a small baking dish with olive oil.

2.)  Cook bacon on low until tender and soft.  (I prefer under the broiler).  Remove and pat dry with paper towel; set aside.

3.)  Stir together cream cheese, Swiss cheese, green onions, bell pepper, Adobo, and pepper in a bowl until combined.  Spread mixture evenly on chicken breasts.  Fold breasts in half and wrap 2 slices of bacon.  (Bacon can be exchanged for thin sliced ham)  Secure with toothpicks as needed.  Place in baking dish.
4.) Bake in oven about 35 minutes.  Remove toothpicks and eat.
